Tasting Note

Ripe red and dark cherry, wild strawberry, spice, underbrush and liquorice with subtle toasted oak; medium–full palate, silky ripe tannins and a mineral, long finish.


Food Pairing

Roast beef, côte de boeuf, venison, duck breast, mushroom risotto, braised short ribs; Asian: Peking duck, char siu, Korean bulgogi, miso‑glazed aubergine, mushroom hot pot.


Production Method

Certified organic/biodynamic viticulture; hand‑harvested, native‑yeast fermentations with some whole‑cluster; élevage ~14–18 months in French oak (c.30–50% new).

Family domaine run by brothers Nicolas & David Rossignol; founded from the Rossignol–Trapet lineage; ~13 ha, biodynamic certified mid‑2000s; holds parcels in Chambertin, Chapelle and Latricières.
