Tasting Note
Perfumed aromas of red roses, kirsch, black raspberries and blackcurrant with hints of lavender, star anise and iron. Medium–full-bodied with precise, grainy tannins, bright acidity and a long mineral-laced finish.

Grass-fed ribeye, roasted rack of lamb, mushroom risotto, beef short ribs; Peking duck, Korean BBQ (galbi), soy-braised beef, char siu, umami-rich stir-fries, aged hard cheeses.

Production Method
Estate-grown fruit, small-batch fermentations and rigorous selection; matured ~18–20 months in French oak (new and used) with minimal intervention and careful blending.
