Tasting Note
Bright ruby with purple hues. Red and black fruit (blueberry, cassis), spice, coffee bean, vanilla and herbal notes; elegant, fresh palate with polished tannins and long, mineral finish.
Food Pairing
Roasted or grilled beef and lamb, game, hard cheeses; Asian pairings: char siu, Korean BBQ, Peking duck, spicy Sichuan beef, mushroom stir-fries.
Production Method
Fermented mostly in stainless steel (≈90%), ~10% in concrete vats; matured 22 months in French oak (≈80% new) and partly in Stockinger vats.
