Tasting Note
Perfumed red and black fruits (strawberry, cassis), rose petal and garrigue, with clove, dark chocolate and graphite; juicy acidity, fine-grained ripe tannins, elegant, focused and long.

Western: grilled lamb, roast beef, venison, braised short ribs, aged cheeses (cheddar, comté). Asian: Korean BBQ (galbi), Chinese red-braised beef, Sichuan-style beef, Japanese yakiniku or teriyaki beef.
Production Method
Biodynamically farmed grapes; fermented mostly in stainless steel with ~10% in oak foudre; aged ~22 months (90% French oak, ~70% new) and 10% in foudres.
