Tasting Note

Lime leaf, honeysuckle, white peach and faint pineapple with crushed stone and honeycomb notes. Tangy, lively acidity with a mineral-driven, very long finish and a lush, silky mid-palate.

Roast chicken, butter-poached lobster, grilled salmon, creamy pasta, pork belly; Asian: miso-glazed black cod, tempura, sushi (salmon/tuna), ginger-scallion fish, yakitori.


Production Method

Hand‑harvested Clone 4 fruit from Charles Heintz Vineyard. Barrel-fermented (predominantly neutral French oak), aged sur lie ~14 months with partial/native malolactic influence; bottled after extended lees contact.
