Tasting Note
Bright, full-bodied Chardonnay with green apple, Meyer lemon, white peach, honeysuckle and apricot, layered with baking spice, vanillin and flinty minerality. Satiny texture, lively acidity and a long, saline finish.
Food Pairing
Western: lobster, crab, roasted chicken, creamy pasta, mushroom risotto; Asian: miso-glazed black cod, teriyaki or soy-glazed salmon, tempura prawns, richer sushi/sashimi (salmon, toro).
Production Method
Barrel-fermented and aged ~14 months in 25–40% new French oak; partial malolactic fermentation and sur-lie aging to build texture and integrate oak.
