Tasting Note
Concentrated black and blue fruits (blackberry, cassis), black cherry and kirsch with floral violet, cracked pepper, smoked meat, leather and garrigue. Grenache elements add bright red berry, spice and floral perfume; finish long, savory and layered.

Food Pairing
Western: grilled ribeye, roasted lamb, braised short ribs, charcuterie and aged cheeses. Asian: Korean BBQ (bulgogi), Sichuan beef, Peking duck, char siu pork, grilled miso aubergine.

Production Method
Estate fruit, small-lot open-top fermentations with significant whole-cluster portion (c.40%); extended élevage (~38 months) in French oak (high % new oak on Syrah lots).
