Tasting Note
Perfumed and opulent: buttered apricot, orange blossom, brioche, chamomile, dried lemon peel and honeyed pineapple. Full-bodied, satiny texture with bright tangy acidity and a long, honeyed-butterscotch finish.

Western: roasted pork belly, beurre blanc scallops, roast chicken with herb butter, creamy poultry, aged Comté or triple-cream cheeses. Asian: miso-glazed black cod, rich sushi (toro), coconut-based Thai curries, soy-butter seared scallops, char siu pork.
Production Method
Aromatic white blend fermented and aged ~23 months on lees in French oak (barrels, puncheons, demi-muids) with ~45% new oak; bottled August 2022 after long élevage.
