Tasting Note
Ripe dark cherry and plum with blueberry and cassis, floral and earth nuances. Chalky, saline minerality, fine layered tannins, dark chocolate/caramel hints and a medium-long, precise finish.

Food Pairing
Western: roast chicken, duck confit, pork loin, mushroom risotto. Asian: char siu or Cantonese roast pork, miso-glazed salmon, teriyaki duck, grilled shiitake and soba.

Production Method
Hand-harvested, rigorously sorted and mostly destemmed. Cold-soaked and fermented with temperature control; aged in French oak barrels with limited new oak to emphasize terroir.
