Tasting Note
Perfumed red and dark cherry, raspberry and rose petal with exotic spice, minerality and bright acidity. Silky, fine-grained tannins and a hauntingly long, elegant finish with earthy and floral nuances.

Roast squab, pigeon, duck breast, truffle dishes, beef bourguignon, mushroom risotto; Asian: Peking duck, miso-glazed black cod, soy-glazed duck, grilled salmon with light teriyaki.
Production Method
Organically farmed fruit; meticulous sorting and de-stemming; small-batch fermentation in a tiny cuverie; élevage in oak (two of three barrels new in 2016); malolactic completion in barrel.
