Tasting Note
Pure, terroir-driven Pinot: vivid redcurrant, wild strawberry and black cherry with sous-bois, damp moss and mushroom notes. Fine, silky tannins, saline minerality, precise acidity and an impressively long, focused finish.

Western: roast duck, beef bourguignon, lamb rack, mushroom risotto. Asian: Peking duck, char siu, miso-glazed salmon, shiitake and dashi-based dishes, bulgogi (Korean BBQ).
Production Method
Hand-harvested, fully destemmed after sorting, cold-settled, indigenous-yeast fermentation (22–30 days), malolactic in barrel; élevage ~18 months in French oak (≈50% new); bottled unfined and lightly filtered.
