Tasting Note
Concentrated yet elegant Pinot Noir: black cherry, raspberry and blackcurrant with violet, sandalwood, forest-floor and spice. Plush, mineral-driven palate with firm, sinewy tannins, lively acidity and an expansive, very long finish.

Food Pairing
Western: roast duck, beef tournedos, lamb, game birds, mushroom risotto, aged Comté. Asian: Peking duck, char siu pork, miso-glazed salmon, soy‑braised short rib, earthy shiitake or mushroom hotpot.

Production Method
Organic farming; 100% destemmed fruit, cold maceration (8–10 days), indigenous yeast fermentation, élevage 18–20 months in Allier oak with ~60–70% new for Premier Cru. Bottled with minimal filtration.
