Tasting Note
Perfumed and layered: red and black cherry, raspberry, floral rose and sous-bois, sandalwood spice and stony minerality. Silky yet powerful, with polished tannins, firm mineral backbone and a very long, saline finish.

Food Pairing
Western: roast or braised red meats (tournedos, lamb), game, duck confit, medium-aged cheeses. Asian: Peking duck, char siu, beef stir-fry with shiitake, sukiyaki, mushroom hot-pot (nabemono).

Production Method
Hand-harvested; 100% de-stemmed; indigenous-yeast fermentation in wooden vats; ~18 days maceration; aged 16–18 months in French oak (c.60–67% new); minimal fining/filtration; sustainable (lutte raisonnée) practices.
