Tasting Note
Concentrated, elegant Pinot Noir — black cherry, blackberry and violets with sous-bois, tobacco, spice and stony minerality. Medium-plus body, firm grainy tannins and a long, sappy, dusty finish.
Food Pairing
Western: roast duck, côte de boeuf, braised lamb, mushroom risotto, truffle dishes. Asian: Peking duck, miso-glazed black cod, char siu, Korean bulgogi, shiitake ramen.
Production Method
Organic/biodynamic viticulture; partial whole-cluster fermentation (c.50–60% some vintages); open wooden vats; malolactic in barrel; matured in a high proportion of new and used French oak; bottled without fining/filtration.
