Tasting Note

Medium-bodied red: plum, blackberry and dark cherry with dried herb, truffle and subtle oak spice. Fine-grained, velvety tannins, balanced acidity and a long, savoury finish.


Food Pairing

Roast lamb, grilled ribeye, mushroom risotto; Asian: beef rendang, Korean BBQ, char siu pork, spicy Sichuan dishes; aged hard cheeses.


Production Method

Hand-picked from ungrafted 1860 vines; fermented in historic open oak vats and matured ~18 months in French oak (often part new), small-batch bottling.

Tahbilk, established 1860, farms rare pre-phylloxera ungrafted Shiraz vines (c. half an acre). The '1860 Vines' is a tiny, collectible single‑vineyard release with long cellaring potential.
