Tasting Note

Blackcurrant, blackberry, cedar, tobacco and dried herbs with subtle violet and graphite notes. Medium–full bodied, firm grainy tannins, juicy mid-palate and an earthy, slightly savory finish.


Food Pairing

Western: roast lamb, ribeye or beef stew, game birds (pheasant), aged hard cheeses. Asian: Peking duck, char siu (Cantonese roast pork), Korean bulgogi or galbi, grilled beef with soy-ginger glaze.


Production Method

Hand-harvested with optical sorting; fermented in stainless steel/concrete; matured ~15 months in oak (≈50% new).
