Tasting Note
Golden colour; mature notes of baked apple, dried apricot, toasted almond, vanilla, light mushroom/forest-floor and spice. Creamy, sapid palate with bright acidity and a long nutty, saline finish.

Western: roasted chicken, creamy pasta, grilled sea bass, seared scallops, mushroom risotto. Asian: sashimi (tuna/sea bream), miso-glazed black cod, sushi, light Thai fish dishes (miso/lemongrass).
Production Method
Hand-harvested Chardonnay from Vigna di San Francesco. Soft pressing, barrel fermentation and ageing in French oak barriques (portion new), partial malolactic fermentation and lees ageing to build texture.
