Tasting Note
Concentrated black cherry and cassis with lavender, graphite, cedar and Mediterranean herb. Polished, velvety tannins, bright acidity and a long mineral finish. (Young; benefits from decanting).

Western: grilled rib‑eye, roast lamb, aged Pecorino or Parmigiano, mushroom risotto. Asian: Peking duck, Korean BBQ (galbi), beef rendang, soy/teriyaki glazed steak.
Production Method
Hand-harvested fruit; careful sorting; spontaneous alcoholic fermentation (no added yeast); malolactic in stainless steel; aged 20–25 months in French oak barriques (≈1/3 new).
