Tasting Note
Dense dark berries, violets and eucalyptus over pronounced slate minerality; fine spice, silky texture, bright taut acidity and concentrated yet elegant palate with a long, savory mineral finish.

Food Pairing
Grilled entrecôte, roasted lamb, Secreto Ibérico, mushroom risotto; Asian: Korean BBQ (galbi), spicy Sichuan beef, grilled pulpo/tentacle with lemon-thyme, char siu.

Production Method
Hand-harvested old-vine fruit; whole-cluster native fermentation, short maceration; matured ~8 months in concrete and Stockinger/500L foudres with minimal new oak.

Single steep Les Tosses vineyard (c.90-year-old head‑pruned Carignan) on llicorella (black slate) at ~600–650m; very low yields and small production (c.2,000–3,200 bottles); biodynamic/organic practices.
