Tasting Note
Red cherries, raspberries and black plum with floral violets, earthy spice and subtle minerality. Silky yet firm tannins, bright acidity and concentrated mid-palate; elegant, ageworthy finish.

Food Pairing
Western: roast duck, mushroom risotto, roasted pork, lamb, aged cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon, Korean bulgogi, shiitake ramen.

Production Method
Hand-harvested, destemmed and fermented in open vats with gentle punch-downs/pump-overs; aged 16–18 months in French oak (approx. 30–50% new); minimal intervention.

Domaine Tollot-Beaut, family domaine dating to early 20th century (now 5th–6th gen), owns ~24–25 ha in the Côte de Beaune. Les Fournières vines planted in the 1970s–1980s; focus on vineyard work and classic Burgundian élevage.
