Tasting Note
Powerful Pinot Noir: black cherry, black plum, cassis, floral lift, crushed-stone minerality, spice and earth. Firm structured tannins, vibrant acidity and a long, mineral finish; rewards years in cellar.

Food Pairing
Roasted game birds (goose, pheasant), grilled duck breast, beef short ribs, mushroom and black-truffle dishes; Asian pairings: Peking duck, char siu, braised beef hot pot, shiitake mushroom hotpot, Korean bulgogi.

Production Method
Hand-harvested Pinot Noir from Corton-Bressandes; fermented in open and stainless vats and matured ~12–18 months in French oak (≈50% new); light fining, minimal filtration.

Domaine Tollot-Beaut: family estate since the late 1800s, run by the Tollot family (Nathalie and cousins). ~24–25 ha across Beaune, Chorey-lès-Beaune and Aloxe-Corton, including Grand Cru Corton parcels.
