Tasting Note
Classic, evolved Rioja: red cherry, dried strawberry, brambly plum, tobacco, cedar, leather and orange peel with earthy mineral and savory spice notes; elegant, medium-bodied with fine dusty tannins and a long, savory finish.

Food Pairing
Western: roast lamb, grilled red meats, Iberian ham, aged cheeses, mushrooms. Asian: Korean BBQ (galbi), Cantonese char siu, Peking duck, miso-glazed aubergine, Sichuan-style beef or spiced pork.

Production Method
Hand-harvested, fermented in large traditional vats, aged ~6 years in well-seasoned (mostly American) oak barrels, racked twice yearly, fined with fresh egg whites, bottled unfiltered and further bottle-aged.
