Tasting Note
Deep, perfumed core of satsuma plum, black cherry and blackberry with violet, dried rose and Turkish delight; cedar, graphite, star anise and sandalwood. Dense, powerful palate with ultra-fine tannins, bright acidity and a long, lingering, savory finish.
Food Pairing
Western: roast lamb, braised short rib, venison, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese char siu, rich Thai red curry, Sichuan-style braised beef.
Production Method
Hand-harvested old-vine Shiraz parcels fermented separately in open-top fermenters, basket-pressed, matured ~30 months in new and seasoned French oak barriques; small Viognier portion blended prior to bottling; bottled unfiltered.
