Tasting Note
Deep plums, mulberries, dark chocolate, truffle and cigar smoke with earthy minerality; silky, full-bodied texture and a very long, velvety finish.

Food Pairing
Western: roast beef, lamb, venison, roasted duck, mushroom risotto. Asian: Peking duck, char siu, red‑braised pork (hong shao rou), umami mushroom or soy-braised dishes.

Production Method
Hand-harvested, fermented in small concrete vats, aged ~12–18 months in oak (c.50% new); traditionally vinified, often unfiltered.
