Tasting Note
Opulent black-fruit core (blackberry, black cherry) with violets, cocoa, licorice, eucalyptus and exotic spice. Full-bodied, concentrated, velvety texture, framed by firm grainy tannins and a long, mineral, graphite-tinged finish.

Food Pairing
Western: roast lamb, ribeye, duck confit, beef bourguignon, aged hard cheeses. Asian: Peking duck, char siu, Korean barbecue, soy-braised short ribs, rich mushroom hot pot.

Production Method
Hand-harvested; fermented in small concrete and stainless tanks with careful selection; aged ~16–18 months in about 50% new French oak.
