Tasting Note

Bright red fruits—red currant, cranberry and raspberry—plus cassis, dried herbs, forest-floor and a hint of mint. Precise, vibrant palate with fine-grained tannins, integrated French oak and a long, dry cherry-pip finish.


Food Pairing

Roast lamb, grilled ribeye, braised beef short ribs, aged cheddar; Korean BBQ, char siu, beef rendang, miso-glazed eggplant, Peking duck.


Production Method

Destemmed-only fruit, majority static fermentation with small open-ferment lots; wild yeasts, 24–34 days on skins, basket-pressed and matured 18 months in French oak (62% new).
