Tasting Note
Bright cassis, boysenberry and blackberry with potpourri, bay leaf, red peppercorn and ocean-spray minerality. Elegant, fine-grained tannins, succulent palate and a long, perfumed finish.

Food Pairing
Western: grilled lamb, roast beef, aged cheddar, mushroom risotto. Asian: Korean BBQ (bulgogi), char siu or hoisin-glazed duck, shiitake beef stir-fry, braised short ribs (Korean galbi).

Production Method
Hand-harvested, destemmed whole berries, wild-yeast ferment (static and open-top), 11–33 days maceration, basket-pressed to French oak (59% new), matured 18 months.
