Tasting Note
Wild blackberries, cherries and floral violets with herbal tomato-leaf and pea-shoot notes; leather, tobacco and iron-rich minerality underpin a silky, layered palate with firm, polished tannins and a long, linear finish.

Western: roast lamb, braised short ribs, mushroom risotto, aged hard cheeses. Asian: Peking duck, Korean BBQ (galbi), char siu, miso-glazed eggplant.
Production Method
Small-lot vinification; separate micro-lot fermentations, aged in French oak (portion new), native malolactic in barrels and bottled with minimal filtration after ~18 months.
