Tasting Note
Intense ruby-garnet Nebbiolo: cranberry, pomegranate, rose, dried orange peel, hay, tobacco, white pepper and wild mint. Robust, mineral-driven palate with black cherry, blood orange and austere Serralunga tannins; long, lingering finish.
Food Pairing
Roasted lamb, braised beef, osso buco, truffle risotto, aged Pecorino; Asian: Peking duck, char siu/roast pork, Korean BBQ (galbi), mushroom hot pot, miso-glazed eggplant.
Production Method
Hand-harvested Nebbiolo. Cold pre-/post-fermentation maceration; 3–4 week submerged-cap fermentation in stainless steel; malolactic in wood; ~30 months aging in large oak casks (some barrique); bottled unfiltered.
