Tasting Note
Perfumed and concentrated: violets, rose, red and black cherry, crushed raspberry, wet stone and spice. Silky texture with bright acidity, mineral backbone and fine-grained tannins; long, persistent finish.

Food Pairing
Western: roast lamb, duck breast, grilled steak, mushroom risotto, aged Comté. Asian: Peking duck, char siu, miso-glazed salmon, Korean BBQ short ribs, shiitake/mushroom hot pot.

Production Method
Organic, hand-harvested from vieille vignes. Fermented (destemmed) with minimal intervention, little/no sulfur during vinification; aged ~18 months in used barrels; minimal SO2 at bottling.

Vineyard Info
Small family domaine founded by Vincent Ledy (estates ~3.5–4 ha). Ecocert/organic farming, oldest Porrets vines planted 1935, horse-ploughed, very low yields and boutique production.
