Tasting Note
Light golden Chardonnay with yellow plum, honey, beeswax, citrus peel and pronounced limestone minerality. Rich yet tense palate, balanced acidity and a long, refined finish.

Western: lobster with butter, roast chicken, grilled sea bass, creamy pasta. Asian: miso-glazed cod, sushi (fatty tuna), tempura, steamed fish with ginger and scallions.
Production Method
Directly pressed, native/spontaneous fermentation, aged ~24 months in barrels (mix of used and some new, ~25% new). Bottled unfined, unfiltered, minimal added sulphur.
