Tasting Note

Fresh wild strawberry and cranberry, floral hibiscus and pink grapefruit rind, light earth and chalky minerality, subtle spice. Crunchy acidity, elegant, light–medium body and fine tannins, moderate finish.


Food Pairing

Western: roast duck, mushroom risotto, grilled salmon, pork tenderloin, charcuterie. Asian: Peking duck, char siu, miso‑glazed salmon, teriyaki chicken, Korean BBQ (bulgogi).


Production Method

Biodynamic, hand‑harvested Pinot Noir; spontaneous (wild‑yeast) fermentation, aged in vats/used barrels, minimal or no added SO2, unfined and unfiltered.
