Tasting Note
Bright ruby; red cherry and raspberry, floral potpourri, undergrowth and light mushroom notes. Fresh acidity, delicate spice and silky texture with a dry, elegant finish.

Food Pairing
Western: roast chicken, mushroom risotto, charcuterie, roasted pork loin, grilled salmon. Asian: Peking duck, hoisin-glazed pork belly, teriyaki salmon, shiitake ramen, char siu, Korean bulgogi.

Production Method
Organic/biodynamic viticulture; whole-cluster natural fermentations, minimal/no added SO2, aged in tanks and/or used barrels, unfined and unfiltered.
