Tasting Note
Bright red cherry and raspberry, floral lift, light spice and earth, fresh acidity, silky light-to-medium tannins and a clean, medium-length finish. Energetic and pure with a natural-wine brightness.

Food Pairing
Roast duck, herb-roasted lamb, mushroom risotto; Asian pairings: Peking duck, teriyaki salmon, miso-glazed dishes, char siu, yakitori.

Production Method
Biodynamic/organic viticulture; native-yeast fermentation with minimal cellar intervention, often whole-cluster or gentle pigeage, little-to-no added sulphur, aged in tank and neutral oak.
