Tasting Note
Bright lemon and white-peach fruit with flinty/mineral core, creamy lees texture, subtle brioche and hazelnut oak spice, focused acidity and a long saline finish.
Food Pairing
Western: roast chicken, pork belly, creamy seafood (lobster/seafood pasta), mushroom risotto. Asian: miso-glazed salmon, tempura prawns, sushi/sashimi (oily fish), Cantonese roast duck, yakitori.
Production Method
Hand-harvested, overnight chill and whole-bunch pressed; wild/native yeast fermentation in French oak (≈30% new), matured ~10 months with no malolactic fermentation; bottled under screwcap.

Yarra Yering, founded 1969 by Dr Bailey Carrodus, farms estate vineyards in Gruyere (Yarra Valley). Now led by winemaker Sarah Crowe; known for old-vine blocks, precise viticulture and minimal-intervention winemaking.
