Tasting Note
Lemon, peach and nectarine with hazelnut, toasted brioche, coconut and sea-smoke. Medium–full, silky texture, bright mineral acidity and subtle oak-driven creaminess; savory, complex, long finish in a Burgundian style.

Western: lobster, roast chicken, creamy pasta, pork belly, mushroom risotto. Asian: miso-glazed salmon, tempura, sushi (fatty tuna), milder Thai green curry, Chinese steamed fish with ginger & scallion.
Production Method
Hand-harvested old-vine fruit; whole-bunch pressing, native-yeast barrel fermentation in French oak (Premium commonly 100% new), full malolactic conversion and 12–16 months lees ageing with occasional bâtonnage; minimal intervention.
Vineyard Info
Founded by Phillip Jones in 1979 at Leongatha (South Gippsland). Organic since 1993 and biodynamic since 2002. Small estate with old-vine blocks; Jean‑Marie Fourrier became chief winemaker in 2020. Very limited production, allocation release.
