Tasting Note
Spicy, earthy red with redcurrant, black cherry and violet aromas. Concentrated raspberry and black cherry palate with forest-floor and clove notes, fine-silky tannins, bright acidity and a long, savory finish.

Western: roast duck, mushroom risotto, roasted pork loin, herb-crusted lamb. Asian: Peking duck, char siu pork, miso-glazed salmon, shiitake soba, teriyaki beef.
Production Method
Hand-harvested fruit, native-yeast fermentations, matured 15–17 months in French oak (≈35% new). Low-yield, minimal-intervention viticulture with under-vine cultivation and no herbicides/pesticides.
