Tasting Note

Aromas of rose, wild cherry, cranberry, licorice and tar. Silky mid-to-full body with fine-grained tannins, bright acidity, saline minerality and a long, spice-tinged finish.

Food Pairing

Western: braised beef, roast lamb, game, mushroom risotto, truffle pasta, aged cheeses. Asian: Peking duck, char siu (Cantonese roast pork), Korean BBQ (bulgogi), umami-rich miso dishes, shiitake noodle or hot-pot dishes.

Production Method

Hand-harvested Nebbiolo; native-yeast fermentation in stainless steel with 10–15 days maceration; malolactic in oak; ~30 months aging in 300L barrels and large botti (≈50hl) with ~10% new French oak; bottled and rested. Organic viticulture.

Family-owned Ceretto, founded 1937; terroir-focused estate that farms the Bussia Soprana parcel (~0.7 ha) in Monforte d'Alba. Known for single-vineyard Barolos and organic practices.
