Tasting Note
Perfumed red fruits (red currant, cherry, blueberry) with licorice, white pepper and light cocoa. Medium-bodied with bright acidity, silky fine-grained tannins and a balanced, moderately long finish with subtle toasted oak.
Food Pairing
Western: grilled steak, roast lamb, aged cheddar, mushroom ragù. Asian: Peking duck, Cantonese roasted pork (char siu), Sichuan-style beef, Korean BBQ (bulgogi).
Production Method
Individual variety fermentation, matured ~12 months in a mix of stainless steel, old oak and ~10% new small-format French oak barriques; blended and bottled as the estate's second wine.
