Tasting Note
Very fine mousse with stone-fruit and brioche aromas, toasted cereals, fennel and sea-spray minerality. Precise, saline and austere on the palate with lemon, apricot and dried herb notes; long, very dry finish.

Western: oysters, scallops, ceviche, grilled/roasted white fish, roasted chicken, creamy cheeses, mushroom risotto. Asian: sashimi/sushi, tempura, steamed fish with ginger-soy, Vietnamese seafood salads, lightly spiced Chinese seafood dishes.
Production Method
Hand-harvested with grape-by-grape selection; whole-bunch pressing; native-yeast fermentation in stainless steel and concrete; 9–17 months in tank, bottled for secondary (traditional) fermentation and aged ~100 months on the lees before disgorgement; minimal/no dosage.

Pepe Raventós' single-plot cuvée from Clos del Serral (planted 1954). Part of the historic Raventós i Blanc estate; biodynamic farming, low yields and very limited production from old co-planted Xarel·lo and Bastard Negre vines.
