Tasting Note
Pale ruby; perfumed black cherry, wild berries, mountain herbs, crushed stone and subtle smoke. Silky, precise palate with bright acidity, fine-grained tannins, delicate bitter edge and a very long mineral finish.

Western: braised rack of lamb, grilled entrecôte, beef stew, aged Manchego. Asian: Korean BBQ (bulgogi), char siu or Cantonese roast pork, Szechuan pepper beef, grilled yakitori with tare.

Hand-harvested Garnacha Peluda; whole-cluster fermentation with indigenous yeasts; aged ~8 months in concrete/cement vats. Minimal-intervention, biodynamic practices; bottled early to preserve freshness.
