Tasting Note
Pure Carignan: black cherry and blackberry, graphite and warm slate minerals, spice and floral lift. Elegant, fresh acidity with fine silky tannins, medium body and a long mineral finish.
Food Pairing
Western: grilled lamb, roast duck with red fruits, truffle pasta, aged Manchego or other cured cheeses. Asian: Peking duck, Korean BBQ (bulgogi), soy‑braised short ribs, miso‑glazed eggplant.
Production Method
Whole‑cluster fermentation with indigenous yeasts; pressed mid‑fermentation; aged ~8 months in concrete; organic/biodynamic viticulture; minimal intervention.
