Tasting Note
Concentrated black cherry and raspberry with licorice, forest floor, truffle and smoked spice. Silky, polished tannins, lively acidity and pronounced minerality leading to a very long, refined finish.

Food Pairing
Western: roasted duck, venison, guinea fowl, beef en croûte, mushroom risotto, aged Comté. Asian: Peking duck, char siu (Cantonese roast pork), braised pork belly (hong shao rou), shiitake mushroom hot pot, Korean bulgogi.

Production Method
Hand-harvested Pinot Noir; partial destemming, short cold soak (~4 days), 15–21 day fermentation, aged 18–20 months in French oak (mix of new and used barrels).
