Tasting Note
Intense red/black cherry, plum, rose petal and orange-rind aromas with cedar, undergrowth and smoked-meat notes. Medium–full-bodied, concentrated core, fine powdery tannins, bright acidity and a long, saline finish.

Food Pairing
Western: roast lamb, beef Wellington, duck breast, mushroom risotto. Asian: Peking duck, char siu, wagyu teppanyaki, miso-glazed salmon, soy-braised short ribs.

Production Method
Hand-harvested fruit; ~90% de-stemmed; fermentations in small vats with gentle extraction; ~18 days maceration; aged ~18 months in 80–100% new French oak; minimal filtration.
