Tasting Note
Red cherry, wild strawberry, light raspberry, floral and forest-floor notes, subtle spice and mineral undertow. Silky texture with fine, rounded tannins and a medium-length, savory finish.

Roast duck, coq au vin, beef bourguignon, mushroom risotto; Asian: Peking duck, char siu pork, miso-glazed fish or aubergine, mushroom hotpot.

Production Method
Manual harvest; partial whole-cluster (c.30–50%); native-yeast ferment, cool maceration; aged 12–18 months in oak (≈30% new). Minimal filtration.
