Tasting Note
Perfumed, intense dark cherry and raspberry fruit with spicy floral lift, fine minerality and a cushioned, mouth-watering texture. Generous yet poised, showing length, savory undergrowth and gentle spice on the finish.

Western: roast duck, lamb, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu (Cantonese roast pork), miso-glazed black cod, shiitake mushroom hot pot.

Production Method
Hand-harvested old-vine Pinot Noir; partial whole-cluster fermentation (c.50%), native yeasts, stainless/vats fermentation, élevage in French oak (approx. 30% new) for ~12–15 months; minimal cellar intervention.
