Tasting Note
Bright red cherry and raspberry with blood‑orange zest, rose and wild thyme; cool slate/mineral dust, silky fine tannins, vibrant acidity and a long, saline finish.

Food Pairing
Western: roast lamb, grilled red meats, aged Manchego, porcini & rosemary tart. Asian: Peking duck, Korean bulgogi, char siu, grilled shiitake skewers, mildly spiced Szechuan pork.

Production Method
Hand‑harvested; destemmed and lightly crushed; indigenous yeast fermentation in oak vats; 14 months élevage in a large French oak foudre; minimal handling at bottling.

Single 1.3‑hectare La Baixada vineyard on llicorella (slate) terraces in Gratallops; north‑facing, ~20‑year‑old vines; bottled separately since 2018 with very limited production.
