Tasting Note
Blue- and black-fruit (blackberry, blueberry, black cherry) with violets, pepper, tar, cigar-box and gamey/meaty nuances. Full-bodied, dense and savory with ripe, silky tannins, dark spice and a long, savory finish.

Western: grilled ribeye, roast lamb, braised short ribs, oxtail stew. Asian: Korean BBQ (bulgogi), Cantonese roasted duck/char siu, Sichuan beef, Malaysian beef rendang, miso-glazed aubergine.
Production Method
Approximately 75% whole-cluster fermentation; 21 months élevage in French oak (50% new barriques and 600L demi-muids, 50% used). Small-lot vinification with partial destemming and extended aging before bottling.
