Tasting Note
Intense ruby with purple hues; cherry, ripe black cherry, pomegranate, violets, vanilla and subtle balsamic. Dense yet fresh, with supple savory tannins and a long finish recalling dark chocolate and coffee.

Roast lamb, grilled steak, braised short ribs, tomato-based pastas, aged Pecorino; Asian: Peking duck, char siu, Korean BBQ beef, richer mushroom stir-fries or mildly spiced Sichuan dishes.
Production Method
Individual fermentation in truncated conical tanks with careful maceration; malolactic in oak; aged ~13 months in mostly new French (and some Hungarian) barriques, then ~12 months bottle aging.
