Tasting Note
Concentrated blackcurrant, black cherry and plum with graphite, cigar tobacco, cedar and alpine herbs; mineral salinity and roasted spice, silky fine-grained tannins and a long, precise finish.

Western: grilled or roast lamb, beef short ribs, venison, mushroom risotto, aged cheeses (Comté/cheddar). Asian: Peking/roast duck, Sichuan beef or spicy hotpot, Cantonese roasted meats, Korean BBQ, braised pork belly with shiitake.

Production Method
Hand-harvested terraces vinified parcel-by-parcel; gravity-fed fermentation, malolactic in barrels and oxygen‑permeable stoneware jars; aged ~35% new French oak, older oak and stoneware, final blending at sea level.
