Tasting Note
Dense dark-fruited core of cassis, black cherry and plum with lifted herbal notes (mint, green pepper), cedar, tobacco and graphite. Silky, fine-grained tannins, vibrant acidity and a long, savory finish.

Western: grilled ribeye, roast lamb, aged Comté, mushroom ragù. Asian: Peking duck, Sichuan beef, Korean BBQ (galbi/chadol), Cantonese roast pork or spicy lamb hot pot.
Production Method
Hand-harvested high-altitude grapes; fermented in temperature-controlled vats; matured ~12 months in French oak (≈30% new/30% older) and remainder in Yunnan stoneware jars, with additional tank resting prior to bottling.

Ao Yun is an LVMH (Moët Hennessy) project established from high-altitude vineyards (2,200–2,600m) around Shangri‑La. First vintage from 2013; boutique production from four villages (Xidang, Sinong, Shuori, Adong).
